Sunflower is a yellow-flowered agricultural plant in the daisy family, grown for its kernels and oil. It is one of the most important oil sources in the world and in our country. In our country, more than 70% of the planting as oil is in Thrace and Marmara regions. Liquid oil, which is low acid and yellowish in color, is used as cooking, as well as in the production of margarine, soap and paint. The seeds with small grains have a higher oil content, those with larger ones have a lower oil content. In the oil sunflower seed processed in pre-pressed and extraction plants, approximately 41% oil and 42% pulp are obtained, although the quality of the seed varies. 1-1.5% and below fat is targeted in the resulting pulp. Large-grain sunflower seeds are mainly consumed in cookie varieties.​
